No-bake Peanut Butter and Oatmeal Energy Balls

We love peanut butter because it’s filling and energy-dense.  It’s a great source of plant-based protein, unsaturated fat and complex carbohydrate fiber.  These are the optimal kinds of protein, fat and fiber. 

These no-bake peanut butter and oatmeal energy balls are the perfect on the go snack to leave you feeling full, nourished and energized.

 

Ingredients

  • 1/8 cup PEANUT BUTTER
  • 1 cup DRY OATS
  • 1 BANANA (mashed)
  • 1/4 cup HONEY
  • 2 tbs COCOA POWDER
  • 1/2 cup MINI CHOC CHIPS
  • dash of SALT
  • 1/2 tsp VANILLA (optional)

Directions:

  1. ADD all the ingredients to a medium bowl
  2. STIR to combine them (mixture should be sticky)
  3. REFRIGERATE at least 30 min
  4. Use a spoon to SCOOP the mixture into your hand
  5. ROLL into a ball
  6. REPEAT with the remaining mixture (about 12)
