We love peanut butter because it’s filling and energy-dense. It’s a great source of plant-based protein, unsaturated fat and complex carbohydrate fiber. These are the optimal kinds of protein, fat and fiber.
These no-bake peanut butter and oatmeal energy balls are the perfect on the go snack to leave you feeling full, nourished and energized.
Ingredients
- 1/8 cup PEANUT BUTTER
- 1 cup DRY OATS
- 1 BANANA (mashed)
- 1/4 cup HONEY
- 2 tbs COCOA POWDER
- 1/2 cup MINI CHOC CHIPS
- dash of SALT
- 1/2 tsp VANILLA (optional)
Directions:
- ADD all the ingredients to a medium bowl
- STIR to combine them (mixture should be sticky)
- REFRIGERATE at least 30 min
- Use a spoon to SCOOP the mixture into your hand
- ROLL into a ball
- REPEAT with the remaining mixture (about 12)
