Thai Peanut Sauce

Add to noodles, veggies, chicken or tofu!

Ingredients:

  • 3/4 cup PEANUT BUTTER
  • 2 tbs RED CURRY PASTE
  • 3/4 can COCONUT MILK
  • 2 tbs HONEY
  • 2 tsp SOY SAUCE
  • 1 tsp SALT
  • 2 tbs APPLE CIDER VINEGAR
  • 3/4 cup WATER

Steps:

  1. ADD all ingredients to a saucepan
  2. STIR to combine
  3. SIMMER over medium-low heat
  4. STIR while simmering for 5 min
  5. ADJUST consistency with water
  6. (should be thick)
  7. CHOOSE noodles, veggies, chicken or tofu to pair it with!
